Stinking Bishop
Product Details
The name of this cheese suggests that it would be incredibly pungent and strong, but in fact this is a gentle cheese. Its paste is light, moist and often goes spectacularly runny in texture. The flavours are reminiscent of fresh milk, sweet cream and with a fruity hint which is likely to be influenced by the fact that is is rind washed with perry.
Made by Charles Martell and his team at Laurel Farm near Dymock Gloucestershire. The rather striking name, comes from that of an old variety of perry pear which in turn was named after a rather unpopular Farmer Bishop.
