Cashel Blue, Ireland's first artisanal blue cheese, is a soft, rich and creamy-sweet blue cheese. Its combination of richly creamy texture, milky paste and gentle blueing make it a very approachable, easy-eating blue.
Originally made by Jane and Louis Grubb, this cheese is now made at the dairy on their farm by Gert van den Dikkenburg and his team, while their daughter Sarah and husband Sergio Furno manage the dairy.
