Cardo

A fairly unique mixture of meatiness and pungency from its washed rind with the fresher, floral goaty flavours of its centre and alongside a vegetal and sometimes slightly bitter flavour that hints at artichokes, Cardo has a silky breakdown and firmer centre. This cheese is made without rennet and uses and infusion of cardoon stamens to set the milk. The slight vegetal bitterness and the lighter breakdown are characteristic of the sort of set that cardoon provides.
Made by veteran cheesemaker Dr Mary Holbrook who is well known in the cheese world as a former university doctor who changed courses dramatically as she turned to goat farming and cheesemaking. This cheese is made at her farm, Sleight Farm not far from Tymsbury near Bath. Like all Mary's cheeses, Cardo is produced seasonally between March and October.
