Brie de Meaux

Densely buttery and creamy in texture with the classic, vegetal, cabbagey flavour that you expect from a classic Brie. RIcher and more complex than most Brie de Meaux but when aged, these cheeses are able to break down to a soft texture and develop rich, mellow flavour rather than sharp.
Made by Donge, a family owned co-operative set up in the 1930s by Etienne Donge and now run by his grandsons Luc and Michel. They buy milk from a number of local farms near to their dairy in Triconville in the Isle de France and their cheese is traditionally made with the curd still set in small vats (or bassins), cut by hand with a single knife (called a 'sabre') and ladled by using a wide, shallow ladle called a 'pelle'.
