Berkswell is a cheese that demonstrates the variation sheeps milk can give you as you pass through the seasons. Winter cheeses have a fresher profile with a shortbread,buttery biscuit base and livened with notes that can bring to mind wild strawberries. As winter passes to spring the berry fruit flavours deepen to raspberry and blackberry and the biscuit butteriness grows more savoury and even quite meaty. Summer cheeses have big, full-on roast lamb toastiness.
