Appleby's Cheshire has the zesty freshness you expect from a Cheshire but there's more; a flinty mineral quality and savoury richness that follow up the initial citrus notes and round the whole flavour out.  Texturally, it has a flaky moistness that breaks apart appealingly in the mouth as you eat it and makes you reach out for another slice.

Made by the Appleby Family and Garry Gray at Abbey Farm near Hawkestone, Shropshire, the thing that sets Appleby's Cheshire aside from most other Cheshires is that in their recipe, they use less of the bacterial starter culture that acidifies the milk than most.  The effect of this is to allow the mineral and savoury qualities to develop and makes for a more complex and balanced cheese.
